BROCCOLI AND RICE CASSEROLE RECIPE

BROCCOLI AND RICE CASSEROLE

Broccoli and rice casserole is very easy to make.  I like to add a little onion to mine.

  • 1 small onion, diced (optional)
  • 2 T. margarine or coconut oil (optional)
  • 1 C. white rice
  • 2 C. water
  • 1 t. salt
  • 1 1/2 - 2 lb. broccoli, frozen or fresh
  • water
  • 1 t. salt
  •  1 15 oz. jar Cheez Whiz or equivalent
  • 1 can cream soup (chicken or mushroom)
  • bread crumbs (optional)
Cook rice using 2 C. water and 1 t. salt:  Add all ingredients in covered pan.  Bring to boil on high, then lower to simmer for 15 minutes.  Remove from heat.

Sautee onion in margarine or coconut oil for a minute or two to soften.  Remove from heat.

Boil broccoli in water in 5 qt. Dutch oven until soft. Remove from pot and drain.

In large bowl, combine Cheez Whiz,  cream soup until incorporated.  Add desired amount of rice and blend.  I normally use about 3/4 of the cooked rice.  Add onions.  Add broccoli to desired ratio of rice and broccoli.

Pour mixture into baking dish and top with bread crumbs.  Bake at 350 degrees for about 30 minutes or until edges start to turn brown.

RAISING SOMEONE ELSE'S CHILDREN

RAISING SOMEONE ELSE'S CHILDREN

Not everybody grows up with their mom and dad.  It is a sad thing when parents decide to pursue personal pleasure rather than own responsibility for raising their children.

When a toddler or a child gets sick, there is nothing more comforting than to be held and loved by a parent.  When a child makes a simple accomplishment such as sitting on the potty and doing their business there rather than in their panties, it is more meaningful to have the praise of a parent than someone off the street.  Or when the child makes a new friend at daycare or a good grade at school, the praise of a parent is far better than that of someone who is not related.

I want to take a moment to thank all of you who are giving your time, effort, finances, and love to try to stand in for the missing parents.  You guys rock!  I know a few who are involved in trying to make a difference in a child's life, selflessly giving of themselves, comforting and loving children who are not their own.  I stand in awe of you!  In fact, I had someone do that for me.  To this day, she is my role model.

To the parents of the children who are being raised by someone else, I would like to encourage you to be strong, change direction in your life.  You've been through some really rough spots in your life, but, you got through them!  You can be the parent your children need.  Seek help from anybody who is willing to help you to be the parent you know you can be.  What will you do ten years from now when your child asks you why you weren't there for them?  Today is the first day of your future, make the most of it!  If people are willing to raise your children, people are willing to help you get on a better path.  Take advantage of the resources available to you.

HURRICANE PREPAREDNESS

HURRICANE PREPAREDNESS

Hurricane season is upon us once again.  Here are a few tips to help you prepare to take care of your family:

  • Keep cash on hand.  During power outages, ATMs and cash registers may not be working.  It is a good idea to have cash on hand to buy emergency items.$100.00 is a good start.

  • Monitor your routine medications.  Refill your routine meds at least a week ahead of schedule since you may not be able to refill them in the event of a storm.

  • fill at least a 33 gallon trash can with water to use for sponge baths, to help flush toilets, etc.

  • keep a loaf of bread and a package of tortillas in the freezer.  supplies disappear at the stores quickly

  • stock up on canned goods such as tuna fish, spam, crackers, peanut butter, etc. that can be eaten without cooking.

  • stock up on bottled water.  I like to have 2 - 3 cases on the floor at all times during hurricane season.

  • stock up on flashlight batteries.  I also like to have a hurricane lamp or two available.

  • keep your cell phone charged

  • clean up around the outside of your house.  If there is a chance of a hurricane, you don't want anything out there that could become a missile. You also don't want to wait for the hurricane warnings to begin this preparation.

  • group your important papers together in a water tight box:  insurance papers, birth certificates, animal records, etc.

  • make sure your coolers are cleaned and ready for use

  • make sure you have batteries for your radio

  • keep your gas tank at least half full.  gasoline becomes a rationed commodity during an emergency

Can you think of something not listed here that you do in preparation?  You are encouraged to leave a comment with your list.  We will update this list as required.
