STRAWBERRY CREAM CHEESE PUDDING
2 pounds strawberries, cleaned and sliced
1 tub (12.75 oz) strawberry glaze
1 cup chopped walnuts (optional)
2 sleeves graham crackers
1 8 oz package cream cheese (at room temperature)
1 14 oz can sweetened condensed milk
(2) 3.4 oz packages instant cheesecake flavored pudding mix
3 C. milk
1 12 oz carton cool whip (thawed), divided
Clean and slice strawberries. Add strawberry glaze and mix until strawberries are coated. Set aside.
Line the bottom of large bowl with graham crackers, set aside.
Combine cream cheese and sweetened condensed milk in a large bowl and beat with an electric mixer until smooth and creamy. Add pudding mixes and milk; continue mixing on low for 4 - 5 minutes or until mixture starts to thicken. Fold in 2 cups cool whip until smooth.
Pour half of cream cheese mixture over graham crackers. Arrange a single layer of strawberries over the cream cheese mixture. Sprinkle with 1/2 cup chopped walnuts. Add another layer of graham crackers, and top with another layer of cream cheese mixture. Top cream cheese mixture with the rest of the strawberries.
Cover and refrigerate for 6 - 8 hours.
When ready to serve, top with remaining cool whip. Crush two bars of graham crackers and sprinkle crumbs over cool whip; then sprinkle the rest of walnuts over that.
